One Ox Tail

1 tin diced tomatoes

2 carrots & 2 celery stalks diced

2 Cups of stock/ red wine/ broth (For Keto recipe, use stock or broth instead of wine)

Thyme and Rosemary

Brown pieces in oil for a few minutes then add all other ingredients and clamp a lid on. Cook on low (or in slow cooker) for 6 - 8 hours.

Serve with mashed potato or cauliflower cheese & green beans.
