Aromatic Lamb Shanks

You will need:
- 2 tbs vegetable oil,
- 2 shanks,
- 1 onion,
- 2 cloves garlic,
- tsp ground ginger,
- pinch salt,
- 1 tbs tumeric,
- pinch dried chilly flakes,
- 1 tsp cinnamon,
- 1/2 tsp nutmeg,
- 2tbs honey,
- 1 tbs soy,
- 1 1/2 tbs marsala,
- 6 tbn red lentils
- a handful of chopped pistachios or blanched almonds.
Method:
Put oil in wide pan & brown shanks, remove and pop them in a roasting tin or casserole pot. Peel onion and garlic and whiz in food processor, or chop finely, add a little oil to pan and fry until soft sprinkling a little salt on. Stir in turmeric, ginger, chilly, cinnamon, nutmeg, then add honey, soy and marsala. Pop the shanks in and fill with water until they almost cover shanks. Bring to the boil then reduce to low heat and simmer gently for 1 1/2 hours, or until tender. Add the lentils and cook for another 20 minutes, or until lentils have softened. Dry toast the nuts and sprinkle over when you serve! Yum Yum. Serve with couscous, mash, rice or potatoes.
